Eggplant pizza rounds are quick and tasty

Ihave a hard time passing up a perfect eggplant at the grocery store but don’t always have time to make stuffed eggplant parmesan or have all of the ingredients for caponata. And I’ve learned that even the perfect eggplant can go bad rapidly, so I try to cook with it the same day or day after I buy it.
