Elizabeth Township: Food trucks returning March 17

In a little more than two months, food trucks will return to Highland Meadows Park in Elizabeth Township.

Brett Maksin, who lives in the neighborhood, reached out to the food trucks last year after the pandemic closed down a lot of activities.

“Highland Meadows Park is just a small park in our community. A lot of people don’t even know it’s there,” Maksin said. “I’m a local realtor and I thought it would be helpful to bring something different to my neighborhood.”

Maksin said it took a little while to get things organized, so the first food truck didn’t make its appearance until June. He had publicized it to be at the park from 5-7 p.m.

“People started lining up at 4:30,” he said. “It ended up with 300 people. The truck sold out.”

The Wednesday evening food events were popular, attracting six or seven vendors — ranging from barbecue to Middle Eastern offerings — with a different vendor participating every other week through early November. 

Maksin already has vendors booked for this year, staring March 17 and running through mid-November. Selections will include crepes, African foods, hibachi, sushi and more. Maksin said he isn’t benefiting from the events, other than getting his name out as a realtor as he hands out free water to those waiting in line.

“I just wanted to get something different here. Everyone was sick of being in the house,” Maksin said.

One thing missing from the Wednesday food truck events was a place for people to sit down if they want to eat outdoors. Maksin mentioned that recently on Facebook, and Elizabeth Township Commissioner Andrew Kuzma reached out.

“In the time that we’re in right now, the township needs to do anything we can to promote restaurants and small businesses and recreation all at the same time,” Kuzma said. “After talking with the township office manager and some of the commissioners, we’ll probably be able to provide a couple of picnic tables, which are needed anyhow.”
